Pesto toast bread with shrimps and vegetables tartare

Ingredients for 4 persons:

  • 6/8 fresh shrimps
  • Lettuce
  • 2 carrots
  • 6 champignons mushrooms
  • Extra virgin olive oil
  • 1 jar of traditional Genoese Pesto di Pra’
  • Homemade bread

Steps

Clean shrimps of their heads, leave 4 whole tails and remove all the shells and the intestines, you can use a toothpick. Keep the heads and the remains to make the sauce. Clean lettuce and carrots, chop them vertically. Clean and cut mushrooms. Cut bread into 1,5 cm wide slices. Cut shrimp tails, add salt and extra virgin olive oil. Place tartare on the bread and dress with vegetables. Before serving, add traditional Genoese Pesto di Pra’.
