The crossing between Ligurian and Sicilian culinary culture
The Red Pesto with Basil is a recipe that calls back Genoese roots when sailors where sailiing trought Mediterranean and on the way back to Genova they had to stop in Sicily, where they were making Pesto with local ingredients like tomaotes and almonds.
Adding our Basil, Olive Oil, cheese like Grana Padano and Pecorino ROmano, Pine nuts, Garlic, Salt and Chili, the final result is an explosion of flavours which perfectly mixes with pasta like gnocchi, spaetzle or also as a sauce for grilled meat or simply with hot bread.
