300 gr flour (0/00/1)
3 eggs
200 gr water
1 tablespoon oil
salt and pepper q.s.
Pesto di Pra’
In a bowl beat the eggs and mix with water and oil. Add the flour a little at a while mixing continuously so as to avoid lumps and leave the dough to rest for 15/20 minutes.
Bring salted water to a boil in a large pot, make spätzle using a special press (look like a potato ricer with larger holes). If you don’t have a Spätzle press, you can use an aluminium bowl of the same size of the pot. Make holes in the aluminium bowl and put it over the cooking water. Press dough through the holes and let each noodle drop into the boiling water.
Let spätzle boil until they rise to the surface and drain with a skimmer.
Serve in a bowl and season with plenty of Pesto di Pra’.
