2 egg yolks
teaspoons Pesto di Pra’ with no garlic
teaspoons white wine vinegar
some drops of lemon juice
300 ml sunflower seed oil
salt and pepper q.s.
In a glass bowl whisk together 2 egg yolks and some drops of lemon juice until doubled in size, add the half quantity of oil a few drops at a time and continue whisking. Add some drops of lemon again, the vinegar, the salt and pepper (if you like) while whisking constantly until you reach the desired consistence.
Savour with a couple of teaspoons of Pesto di Pra’ with no garlic.
Serve as the base for salad or chicken dressings but it can make also a great sandwich spread.
