250 gr string beans
8/10 small tomatoes
4 tablespoons cooked corn
400 gr chicken breast
Fresh aromatic herbs
2 tablespoons Pesto di Pra’
Extra virgin olive oil
Trim and wash string beans, boil them in salted water for some minutes (they must be bright green and crispy). Cover the chicken breast with fresh aromatic herbs (thyme, mint, rosemary, basil, bay leaves….), put the meat into a steamer basket and steam for about 10 minutes. Leave to cool and take the aromatic herbs off.
Place the salad onto a serving dish: fillet the meat, add string beans, corn, chopped and deseeded tomatoes with their vegetable water. Dress salad with Pesto di Pra’ and a drizzle of extra virgin olive oil.
