16/18 prawns of medium size
A jar of Pesto di Pra’ with no garlic
2 limes
A medium piece of fresh ginger
Extra virgin olive oil
Pepper
Clean the prawns: remove the head, the outer body-shell and the intestinal tract. Chop the prawns with a carving knife until you get a fine pulp and set aside.
In a bowl put a teaspoon of Pesto di Pra’, the lime juice, its peel, 4 teaspoons of ginger juice, extra virgin olive oil and some pepper. Whisk all the ingredients until you get a smooth sauce. Season the prawns with the sauce. Serve as you like.
