Potatoes and string beans balls with Pesto di Pra’

Ingredients for 4 people:

 

  • 450 gr potatoes

  • 200 gr string beans

  • 180 gr Pesto di Pra’

  • 50 gr grated Parmesan cheese

  • 2 eggs

  • 2 tablespoons  breadcrumb

  • salt and pepper q.s. 

  • peanut oil

  • breadcrumb for coating

 

Procedure

Jab potatoes with a fork, boil them with their peels, drain and use a potato masher to mash potatoes, while they are still warm.
Cook the string beans, drain and dry them and finally cut them into small pieces with a knife.
In a bowl beat eggs, add mashed potatoes, the chopped string beans, salt, pepper and 2 tablespoons of breadcrumb.
Knead with your hand until the mixture is homogeneous. Form some balls and roll them into breadcrumb. Heat peanut oil in a small sauce pan (deep with high sides) and when oil is hot cook balls for 5/10 minutes. Remove the balls onto a blotting paper towel, put Pesto di Pra’ in  4 little bowls or in 4 small glasses. Lay down the balls in each glass filled with pesto di Pra’. Put a tooth- stick in the balls and serve as an appetizer.
