1Kg.and a half of cherry tomatoes
1 cucumber
2 onions
chopped up basil
chopped up parsley
1 tablespoon Pesto di Pra’ “Serre del Mare”
lemon juice
extra virgin olive oil
salt, pepper
2 slices of hand-made bread
To prepare this fresh soup remove tomato seeds and in a bowl with some water blend the tomato pulp with a mixer. Cut the cucumber into thin slices, salt it and leave it to rest.
Cut the onions into thin round slices. In another bowl mix oil with lemon juice, a pinch of salt and pepper. Add the juice to tomato sauce. Then add cucumber, onions, chopped parsley and basil. Mix well and keep in the fridge till you serve the dish. Cut bread into dices and toast it in a pan with a drizzle of oil. Serve with bread dices and a quenelle of Pesto di Pra’.
