500 gr chicken breast
200 gr boiled potatoes
100 gr boiled string beans
80 gr fresh caciotta cheese by Caseificio Val d’Aveto
50 gr pine nuts
150 gr di Pesto di Pra’
extra virgin olive oil
Salt
Cut thick chicken breasts and flatten them. Stuff the chicken breasts with boiled mashed potatoes seasoned with extra virgin olive oil and salt, with chopped string beans and finally with caciotta cheese in cubes.
Fold the meat in the sides, heat 2 tablespoons of oil and cook the rolls. Spread plenty of Pesto on each roll and serve. You can also lay some pesto on the bottom of the dish where you’ll place chicken breast rolls.
